Rehydrate Mushrooms

To rehydrate Shiitake mushrooms, soak them in any seasoned liquid:
  • salt or soy water
  • sugar water
  • wine water (10:1)
  • any flavor broth
for at least 20 minutes.
The Shiitake mushrooms absorb the flavor of the seasonings.
They taste wonderful when cooked with leek, onions or garlic. Shiitakes are excellent in sauces, stews, rice dishes and with steak or eggs.
